River Rivalry Caviar



It’s October which means Football Season! If you are trying to find a good recipe for tailgating parties or just having people over, no matter what your team may be try Cowboy Caviar! Cowboy Caviar is a great alternative to a queso dip, and it is loaded with nutrients. This recipe doesn’t take more than 15 minutes and is easy to prepare last minute! Cowboy Caviar pairs well with tortilla chips or any chip of your preference!

Prep Time: 15 minutes

Yield: 10 servings

Ingredients:

  • 6 Roma tomatoes, diced

  • 1 bell pepper, seeded and diced

  • 1 medium onion, finely diced

  • 2 jalapeño peppers, seeded and finely diced

  • 1 large avocado, diced

  • 15 oz. can low-sodium corn, rinsed and drained

  • 15 oz. can low-sodium black beans, rinsed and drained

  • 1/2 cup cilantro, chopped

  • 3-4 Tbsp lime juice

  • 1/2 cup light Italian Dressing

  • 4 medium garlic cloves, diced

  • 1 tsp sea salt (optional)

Directions:

  1. In a large mixing bowl, combine tomatoes, onions, jalapenos, beans, corn, avocado, and cilantro.

  2. Stir in lime juice, Italian dressing, garlic, and salt. Enjoy!
